Debatable really. It does change how the games play quite a lot. I'd say, if you just want more content, you're better off play 4, 5 and nexus before jumping to untold.

Very sparse story, it's servicable to anchor you into what you're doing and you get small side stories that are more about world building with optional quests.

Untold 1 & 2 have redesigned dungeon layouts, rebalanced classes, and revised character building mechanics. There are more changes than just "more stuff".

In the original games, and in Untold's classic mode, there is a minimal story. You choose the name, portrait and class of each character at creation and npc interactions are limited.
In Untold story mode, you have a pre-defined party of voiced characters like a more typical JRPG.
Most people prefer classic mode.
5 is the only good one

2 Untold's classic mode is significantly better than the original. The story mode is supposedly good but I didn't try it.
There's no Untold for 3.

That boss persists across NG+ so you can fight both bosses in NG+, they both respawn

Untolds will rape your ass. They are by far the hardest EO entries. Original 1 and 2 are cheese factory in comparison.
The original games are only easy because of how unbalanced they are. Once you figure out the bugs, they're basically solved.

Untold are completely different games. The maps, quests, classes, etc are all different. They're only similar aesthetically.
Untolds are way better by every measurable metric except nostalgia goggles.

They said they were meant to just be things you could add to your party as you got them to round out your party but they weren't balanced around having them at all. So if you autistically grind for them then as expected you will completely break the game, so much so that you can 2 round Primevil on expert. If you're too stupid to clear the game by yourself there's plenty of videos showing how it's done.
Half of the EO2 classes have to be the least fun and weakest classes in the entire series. I don't know what they were thinking when they were designing them. Somehow even the worst EO1 classes are miles better.

EOU2 is better than the original. EOU is more of a mixed bag with how it changed the game but at least the game isn't trivialized by a single skill
