What are good systems or settings to run a very classic fairy tale style game? Where a late game single knight stands a reasonably good chance to slay a dragon, with the aid of friendly fairies or enchanted items, fighting on behalf of a King or Princess.
Not sure on systems, but settings like Bretonnia or Zelda come to mind.

If you are going to go Sleeping Beauty you play as the minions. Play an investigation style game searching for the princess, identifying Princes likely to cause problems, capture Prince Phillip, and prevent him from escaping and protect Maleficent's raven.

Subverting expectations isn't original or clever.
The Eldraine plane from Magic has some decent ideas for worldbuilding. Maybe Savage Worlds or GURPS for the system, since those both have rules to play as nonmagical but still powerful characters like knights or woodsmen and whatnot, but also have monster stats for fairy tale creatures.

Beyond the Wall is practically built for mythic archetypes. Any old school game will do though, before the "dungeon ecology" trend the whole point of the game was mythic underworlds with their own laws and challenges. Hence all the weird creature compendium and intelligent swords.
