You should at least try out 06 and 07. You dont need to go beyond those two though. I own 08, but I dont even remember that one enough to say if it was good or not. No idea of the quality of the series from there onwards.
All the pro football games peaked in the retro era. Madden 2004-2005 was one of the last good ones beside MAYBE 2008 (released in 2007 so it might count). ESPN NFL 2k5 is still probably the greatest sim football game of all time.
Ken Griffey baseball SNES (picrel). Janky and funny but balanced and still fun as hell to play. NBA Live 95 with fouls and out of bounds turned off is great. NHL 96, Virtua Tennis 2K1, Virtua Athlete for stupid jank, Mario Golf GC and GBA. NFL Blitz.
I also acknowledge pro wrestling is essentially a soap opera for men. But your critique of wrestling is completely irrelevant to this conversation. Video game adaptations of wrestling (the /vr/ ones at least) have zero focus on narrative whatsoever. They are purely about the physicality. When you are playing the game, it's not like the game itself is scripted. It's just as much of a competition as Madden or FIFA.
