Elden Ring is harder mechanically than the main souls games, but with the open world you can over level your character, weapon, and get OP spirit ashes to stomp through your normal playthrough if you're a shitter.
How hard were you filtered? And what did you dislike about the game that made you stop playing it? I think ER is pretty easy if you use everything the game offers you and are willing to stop when you hit a wall and explore elsewhere. It's a game that really appeals to that aspect of RPGs where you can run into an enemy you're not prepared for, and the intended solution is to run away from and avoid these encounters, while getting stronger by going after low-hanging fruit. Then you come back stronger and manhandle the enemies that were destroying you before. So if you like the kind of RPG where you really feel your power progression going from zero to hero, then ER might be better suited for you than previous Souls games.

It made the rest of the games click because I could go other places, level up, and be slightly overpowered against the bosses that walled me. So the fights were more fair and I was able to get better at learning the mechanics. That got me better in general, and I was able to go back to the other games and play them properly.
The only great games in your image are Sekiro, Bloodborne and Dark Souls.
Dark Souls 3, Armored Core 6 and Demon's Souls are mid.

I mean, great games, I'm the second biggest fan of FROMSOFT and their games out there, but let's be real, the only "genre defying" game there is demon souls, the first 3rd person souls game, after that it's just a slight adjustment and variations. Armored core is its own thing that no one gives a shit about. It is basically as this guy said , the only difference is the games themselves have soul, still a reskin, but with soul, so it's not really a reskins but a more content of that type, while cod is exactly the same only soulless, so its slop. Ironic how this works, but it's true.

ER is a lot more generous with its checkpointing than the first Dark Souls was. Combat is still fairly ponderous, about the same pace as DkS3.
