I work in music, so I've had to read the shit. A quick example of a YT cover artist who does things the proper way is Megami33. She does Pokémon songs but has total copyright control of her covers because everything is done from scratch and through proper channels.

No one is saying the fan owns the written-composition of the music or the commercial/broadcast rights of their rendition. If I do a cover of a song that lapsed into public domain, I do not own the song but my rendition does not go into the public domain or go into fair-use at it's inception either. They're saying corporations should not be able to use or profit over fan-content without compensating the creator for their rendition, especially those who are so litigious they attack those producing fair-use fan-parodies and content.
