First of all that's not what a subscription is, it's a license
But you can also just get a crack online for free if you bought the game on steam and then just use a steam emulator, bam you own your games now.

if i buy 15 games today on steam, i can play them whenever i want, i can decide i am a bit tired of playing X game for now and dont finish it, and leave it unfinished to play other games and then go back to it 1 year later, 2 years, or more, all without having to spend a single cent more than the initial cost
can i do that on gamepass? no
sure, i'll have new games for "free", but then i'll feel compelled to play them and finish them in the given time or else i won't be able to finish them at my own pace without extending my subscription

i'd rather spend 60 dollars multiple times a year and be able to decide when to play those games, when to finish them, when to go back to them if i stop playing them etc, than to pay 60 only 1 time per year and feel compelled to finish all games in the given time in the eventual possibility i won't be able to/dont want to keep paying for it
lets say i have only 60 dollars per year, and that i wanna buy 6 different 10 dollars indie games or discounted games on steam...i do that, and i can play them now, in a year, or 2, or 3, i can start one now, love it and play it for tens of hours, or get bored of it and decide to shelf it for years and then come back to it, and i can do that for each of the game i bought, and i still won't have to spent more than the initial 60.
if i instead use gamepass and those same games are also on it, then i'll have to finish all of them in a year, and if just so happen to be unable to or simply want to keep playing them or i want to replay them, i'll have to spend 60 more, just to be able to KEEP playing the same games
just cause there's new games everytime it doesnt mean i'll want to play them when they want me to play them, i could be paying 60 dollars and get 10 dollars of games worth out of it

Alot. I have 3 versions of skyrim, with 5000 hours logged on it.
I have 3k hours in destiny 2, 2k hours in dark souls 3 and I even have over 200 hours in zelda (which I emulated for free).
I go back and replay these games every so often as well. I bought horizon zero dawn a year ago and just started playing 2 weeks ago, and I'm already planning on completing it 100%.

Bethesda game saves are always saved in the My Games folder, so you don't even have to transfer them
