Raze looks like washed out shit (not talking about bloom), completely ruins the atmospheric aesthetics of the game. Its wannabe gameplay is also vastly inferior. Raze is total trash and isn't even Blood. Only a dickhead would recommend Raze.
NBlood is the best imo. It's accurate to the original and runs great at high res.
GDX in second place, also accurate to the original. Back when I used it it had some minor performance issues like microstutters when the game first loads any assets in a level but Idk if it's been fixed. GDX also has gameplay customisation options you might dig and has better accessibility for fan content.
FS is shit in a lot of ways. It's not accurate to the original, it sounds awful (both sound effects and music) and has missing gameplay effects like satisfying gibs when you blow enemies up. Not recommended. However FS has the best mouse feel by far out of the mentioned three; GDX and NBlood both have shitty mouse diagonals as is typical with BUILD engine games. FS also fixes the explosion/AOE registry jank that's in the original Blood due to BUILD engine limitations.

Raze is essentially a lot of different Build engine ports plopped into a GZDoom backend. For Blood it uses NBlood under the hood.
