I beat it a couple of days ago and I don't know where people got this "it's too easy" shit from. I beat it on normal and I got a game over or two.
The fight in the Omi headquarters with Goro and Taiga really caught me by surprise in how powerful they were.
This. That being said I know people who over-leveled purely by accident. The city fricking reeks with enemies and if the decision is to spend 5 minutes fighting or find an alternate route that takes a different 5 minutes, most people prefer to just do the fight. I think that's why a lot of people came in overleveled. By rule of thumb you should always try to stick as close as possible to enemies levels in JRPGs I find.
The game's easy if you go out of your way to do a lot of optional content/grinding which the former comes very naturally to Yakuza players.
I had a surprise on that staircase fight too. Probably the hardest encounter in the game. That being said it's overall not a hard game, it's actually surprisingly well balanced considering it's their first time at a turn-based JRPG. I know Kazuma filtered a lot of people, but I don't really know why.

Is the final boss fight at the top of the reverse Millennium Tower. You need to be maxed out to even stand a chance.
Yeah but that's an optional fight, isn't it? I remember you needed to load a clear file for him to even appear.

Yup. He is the hardest encounter in the game by a mile. If you meant storywise, I actually didn't find any encounter that difficult. Maybe I was overleveled.

The only thing that really bothered me about LAD was that Saeko was essentially the only healer, and you really did need a healer. You could have Eri do it but she was so fricking irrelevant to the story.
I know there's a mod that allows all characters to be all classes, and though idol-Adachi looks silly it still gives the game more flexibility.
I liked it a lot. The only part that felt like it really stretched suspension of disbelief to a critical level was the locker-baby shit. I don't understand what writer wrote that down and thought to themselves "yes, this is a good idea".
It's like rolling a yahtzee 10 times in a row all on the same number. I don't care how lucky you are, it's just not happening.
