Do you know if people in those departments at AAA studios tend to get frustrated with having to design mechanics, etc, around mass-appeal, or do they actually happen to like that sort of game?
All the design metrics are driven by study data. Researchers try and figure out what will have the most mass appeal (aka sell the best), deliver those results to the leadership team (directors) who then set goals for what the finished project should aim to achieve. HOW the design teams go about pursuing those goals is up to them, entirely, but like "tutorial must be explicitly guides with audio and visual cues and take a new player no more than 10 minutes, on average" is absolutely something they're not allowed to stray from.
Feel bad for some of the smart ones, because there are some truly 2.0 GPA designers in some of these studios. The good ones really have to carry 1v5, so to speak.

You can reach this point with pretty much every game, like those Souls runs where they use emotes to dodge attacks and frick with hitboxes, or that hilarous longplay of MGS3 where he fricks with the AI to levels that feel glitching the game.
This is not to say there's nothing wrong with it, more that those wo reach this state are people who have already brunt through the game, and not those on the first try.
the problem is the game hits this point around the third zone explored in relative playtime, people just don't realize it until they start noticing all they have been getting are shrines and fricking leafs

The BotW shows how bad hitboxes are as much as the endless amoutn of pursuers or fume knights glitching the shit out of the map and hitting you. There's a reason Souls memed the "shockwave" term, and it wasn't precisely for their consistently good hitboxes.
Again, I'm not pointing that there aren't issues, jsut that you can make almost any game look this bad once you know exactly how it works.

You have to be close, you have to wait when attack starts or ends in order to get one. In my example you yourself can control which mechanics to activate and it requires skill and dedication.
It changes enemies which will have different weapons and attacks compared to normal versions.

After the double jump, everything is in slow mo. Slow mo aim the frost arrow, slow mo skate on the shield to trigger frozen enemy, slow mo to aim another frost arrow, then hit the throw weapon button.

There is infinite daruk combo that allows you to vaporize enemies with 1 reaction frame which is very hard to carry through combo, "stack" combo that allows you to to spawn material nearby and blow them. I am more limited by 3mb limit. And my knowledge about all combat mechanics is pretty much outdated and about 2 years old because I didn't visit it for so long.

I would much rather prefer the devs thought about the actual gameplay. No, walking to the corner of the map to find the bokoblin camp #2149 is not gameplay.
Not enough handholding? Not enough cutscenes and quick time events? Sony exists for that purpose, go check out their games.

I haven't played botw but from all the webms and videos I've seen it looks like they have some interesting mechanics and systems but the world and game's content has the depth of a puddle

Genshin Impact and Immortals Fenyx Rising is a perfect example of how it only grew in popularity because it was riding off of the "Legend of Zelda" names coattails. It was also the only game switch players had for years. They were already starved and delirious.
