Get a stealth boy from the school in goodsprings, wait until nightime and stick to the rightmost wall, you want to kind of climb into it so cazadores can't get to you and by the time they try to turn around the whole mountain they will just forget about you
Stealth boy in goodsprings schoolhouse, at least one stick of dynamite, mountain goat your way across the rocks near the tribal village to avoid cazadores, stealth up, sneak up on the viper leader using the knucks, shove a dynamite stick up her ass, laugh yourself deaf as you realize that reverse pickpocketing explosives is a guaranteed instakill regardless of the damage dealt by the explosive, yoink the armor and the knucks, dynamite the other leader if you can or just beat him into submission.
I usually play without using VATs except for the Cazadors. They move too fast to manually aim at their wings and melee builds just have to tank their venom.
I don't use VATs because it slows down gameplay too much when using it all the time. There's only so many times I can see someone's head explode in slow motion while they ragdoll to the ground, and I hate when I can't skip the ragdolling as other enemies are still unloading on me while I am forced to watch the slow-mo death.

Melee builds have to be permanently high anyway to tank damage before they can reach enemies. An antidote or two won't make a dent in the budget.

I wouldn't mind them on their own. Legion troops drop more than enough antivenom. What makes them cursed as frick is that there's no way to remove the poison from followers so if they get stung once it's a death sentence on hardcore.
It got to the point where I wrote my own script to make companions immune to the effect because I got tired of becoming an overprotective parent every time I heard buzzing.

Best way to navigate the early Cazador infected areas is to shoot the antenna of an adult and watch him kill the young. He will do it and then die of poison after. Naturally at higher levels they're a nuisance at best.

Most of the time that safe gives you a Stealth boy. Occasionally it doesn't.

Never used shotguns in Vegas before, can you get around high dt or did you just pack another weapon for those enemies?
You don't need shotguns, just any grenade rifle. You don't need skill in explosives either.
Shotgun Surgeon gives 10 DT penetration to shotguns. Also stack up crits like a normal person.

For how much cazadors are brought up, I can literally only think that NV gays are just shit at video games.
I've played through NV twice, the second time being a pure melee build. And not once did I struggle with them.

buffalo gourd seed + surgical tubing = no venom in veins. Gourd seeds are aplenty and have the tiniest weight
