I am definitely part of camp play what the frick you want instead of being bored playing what others want you to like but this is a bit different.
Mario is a platforming challenge with a child friendly shell around it but it's enjoyable for all ages. Same with say a kids cartoon shows like say Avatar or Batman where it has a coherent story that can be enjoyed by adults. In both cases it's not gameplay or story that make it childish but the purposeful absence of more mature themes like blood, sex or cuss words.
For something like your leapfrog picture they are made specifically for developing minds. Do you see a yellow duck? Circle the yellow duck. Yay, you circled the yellow duck. It is made for a developmental stage you have grown out of. Same with children's cartoons for very young kids. There is just nothing there for older kids or adults. So you would react to an adult enjoying it with a level suspicion and/or confusion. This meme is basically a fictional scenario because it's nearly impossible to find an adult without a severe learning disability who would like such content while not true for content safe for 7 and up.
Still again though, play what the frick you want. If your like the one well adjusted person who like leapfrog games, go for it.
the exact line between "educational games for developing kids" and "simple games like mario and other platform games" is not 100% clear to people.
Take, for example, the "bing bing wahoo" meme. It quite obviously attacks Mario for it's simplicity. Who even knows where the borders are with people who make these pictures?
I agree the line isn't clear in the perception of people. What I mean though is the line is clear via player numbers.
Mario Odyssey sells 20 million units to a system majority owned by adults, finding even one adult leapfrog player is nearly an impossibility.
the big difference is mario doesn't need to be easy and steadily gets more and more difficult, often too difficult for actual children
this is done in a variety of different ways, some of the earlier games just gradually got harder, land had you need to be not a 5 year to understand where to go and most of the newer ones have it through optional/end game stages with some serious difficulty.
It's funny, I'm sure most people laughing about the Marios couldn't even beat most of the optional stuff in them.
Challenges in NSMBWiiU had legit some of the toughest platforming I ever saw in an official game not precisely designed to frick you over.

one of them lacks any of the specifically "mature" themes that would make them unsuitable for children, either deliberately to appeal to a wider audience, or because of a lack of necessity, and many only have them in smaller less obvious quantities rather than completely lack and them suitable for everyone with an otherwise coherent and well thought out gameplay/plot/themes/whatever
the others are aimed at children who literally need to be taught very simple things and be explained them very simply

Look, video games are the same as any other medium, there’s some games that, to any reasonable and intelligent person, are clearly better than others the same as movies. You would and should feel the same way about a guy who prefers Michael Bay Transformers movies to Alfred Hitchwiener as you feel about someone who prefers Candy Crush to Mario 64 or whatever.
That’s not to say that you shouldn’t enjoy Michael Bay Transformers movies or Candy Crush or FIFA or whatever other popcorn movie/game, they have a place and a value as entertainment, but you get the point. As someone who is enjoying the medium, presumably above entry level, out of self-respect and a desire to enjoy things that are good, you should seek things that are high quality. It would be like being some kind of gourmet and only eating at Denny’s or microwaving Hungry Man dinners.
