The second they start churning out games to coincide with merch/movies like Pokemon does, they're fricked.
They sort of already are churning out games then "completing" them later, they're just very smart about which games they do it with. Like every Mario spin off since 2015, Splatoon, Animal Crossing. They don't do it with their huge prestige games like 2D and 3D Mario, Zelda or Smash Bros for example. Because they know that 90% of people who own a Switch mostly play those mainstream IPs then move on. So people won't notice the problem until it extends to those, even then possibly not, as we see with Pokemon, people mostly don't care.

The first two sort of apply to Metroid Dread, but not the third. The games will never be particularly mainstream on account of it being a sci-fi pseudo-horror franchise. The average tendie doesn't respond well to anything that doesn't have a colorful cartoon and/or anime aesthetic.

The IP needs to become good. The success of the movies showed that people do want the franchise to be good or at least it means there is interest in it for sure. The problem though is the games are routinely such complete ass that its damaged the franchise even resulting in poor game sales. Yet clearly the IP is still very popular. People just don't have faith in Sega and Sonic Team for good reason. They don't even know how to make great games with the IP.
Except you wouldn't have to say goodbye to them, they would just have to be released in a complete state instead of announced for no reason 10 years before being released

Sonic will never be more popular than Mario simply because Mario's A to B run and jump platforming style has more mass appeal than a momentum physics based platformer with multiple paths and a focus on time attacking. Simple as that. Same reason that Donkey Kong will never be as popular as Mario.

I like the concept of Sonic better though. The proper 2D games at least. They carry the heart and soul of what Sonic is supposed to be about. Mario is cool to but I feel like his games got even better in 3D while for Sonic its the opposite.

Yeah Castlevania doesn't seem like the greatest fit with Nintendo. Not that I think they'd ruin it absolutely but it doesn't seem like its in line with their style of games and how they do it.
