WotC (and more importantly Hasbro ie the real DnD owners) are all but happy to have woke shit out the ass in their properties. The thing is that Beamdog got bought out by Aspyr (some literal who company that ports old games) last year and, even though Aspyr is owned by Embracer Group (if you don't know what company that is you should google it now because they're getting really, really big and buying out a lot of smaller game companies Microsoft-style), they don't have the money or resources to give Beamdog what they'd need to make a new Baldur's Gate.
Beamdog for its stacked roster of devs burned out by the transition to AAA rpgs does nothing but support work and fanfiction for existing games, it’s a waste

inxile's BG3 would've been competent rpg that sold well enough among the hardcore rpg fans but utterly forgotten as soon as starfield is out.
More importantly both studios are based in america so writing would've been bland, full of popculture references and scrubbed clean of any mentions of sex or sexuality.

You're all forgeting that no matter who did it theyd be forced to deal with 5e rules . You cant do anything hardcore with them even if you wanted to. And considering that Larian was 100% the best choice since they were already good at making rpgs with easy mechanics.
At the very least Owlcat wouldn't make outlandish changes like nerfing mage hand to be absolutely useless.
They would because mage hand is only as good as the player is creative at using it in the ttrpg. Larian was the best choice to handle this kind of cheesy spell. Owlcat would have make it a boring but strong pet for sure. That's not what it's supposed to be.

Tim Cain said they would have liked to make a Baldur's Gate 3 back when he was still a Troika. It would have been a weird adaptation that tries to change the D&D rules to be more video game appropriate and more importantly be first person and made in Source since they were learning from VtMB. It probably wouldn't have been as fun as Dark Messiah or anything but I would have loved to see what that could have been.
Troika's concepts for BG3 were so weird that it would've been either vtmb tier kino or invisible war tier casual shit. No inbetween.

Better? Unlikely, every other studio comes with their own set of baggage and downsides. In case of BG3 there is really no right choice because fantasy genre and RPG changed quite a bit over last quarter of century, nothing would actually quite feel "right" as a continuation of the series. There is a wrong choice however, and that's Beamdog.
