    >no science fiction
So, it would have to be historical fact. A biography or documentary.

There are plenty of fictional stories set in the modern day without any magic, or things that can be confused for magic: mystery, romance, court drama, dancing, cooking, crime, being a hobo, playing board games... Whatever you want, really. Gurps can probably run it.

If they're realistic, like OP said, they have to adhere to science, and OP said no science fiction.
Science fiction is the only fictional option, but since that's out, the only possibility left is non-fiction reenactment.

          Sci-fi doesn't mean realistic...
Are you pretending or what? Am I being baited right now?

            >Are you pretending or what? Am I being baited right now?
Science refers to the systematic study of the natural world through observation and experiment.
Fiction refers to falsehoods; inventions or fabrications as opposed to fact. However, not nearly to the level of impossibility or improbability, as that's the realm of fantasy.
Ergo, "science fiction" is an invention or fabrication with scientific plausibility based on what has been observed and experimented with in each of its numerous fields.

A decent detective story is always an option for a realistic setting.
On the other side of the law you have a good heist story or a mobster drama.
Military fiction with day-to-day soldier experience in combat zone is another realistic, but adventurous approach.

when I was in high school a girl unironically asked me to dm 1x1 a simple romance story with her, I just said that it was a stupid idea for a game. ... and for things like this that I'm a 30 something single loser

The thing is, no magic or super powers or action heroes would be science fiction; fiction operating within the bounds of plausible science, or in this case, known science. If you remove science fiction, you'd have to make the setting non-fiction, which would require following a historical event point by point with no deviation.
It's possible, but sounds like it's much more trouble than it's worth.

      >all realistic fiction is science fiction!
The definition of science fiction may be vague, but that definitely isn't it. You don't even know what science fiction is.

          >I am going to ignore how the term is actually used and has been used for decades
          >And instead break the term down to its component words and make my own term up
This is very autistic. Worse, is that your breakdown is made up too!. You are now claiming that fiction cannot be impossible, improbable, or fantasy. Not knowing what fantasy means in a tabletop board is bizarre enough, but you somehow don't even know what fiction is!

If you're just going to be regular people doing regular things, a lot of that can be done in Real Life, so is there going to be some overarching plot arc with it to make it more than, say playing Papers and Paychecks?

I like slice of life stuff in my RPGs, sure, time to sit down, get to know people and the world and not be 'combat to combat, encounter to encounter', but on the flip side, if I just wanted to do real life, I'd go out and do it.

    Sure. I recommend Maid RPG.

    >Just realistic guys doing things in America?
Yep, Maid RPG sounds perfect. GURPS as a backup. Just find a genre and play into it. Romance, comedy, mystery, slice-of-life, thriller, crime, political fiction, whatever you want works if you take your pick and run with it.
