You've played the best ones now. From what you said, you should probably play DS3 first since the level design is more focused. If you enjoy how the gameplay feels, play ER. If not, play DS2 first.

If you used overpowered stuff Elden Ring will be very easy, especially if you used Mimic Tear and a build that doesn’t make mimics AI shit itself (stop fricking hitting things with the staff, cast spells!).
But it’s possible to abuse overpowered stuff in every souls game. Sekiro kinda being the exception, mostly, you can abuse Mortal Draw to shit on certain bosses, and Fire Cracker Spam, but that’s a lot different to Comet Azur’ing Mohg.
DeS you can one-shot bosses without even meaning to if you do Magic build. Fire Storm is just that broken.
DaS1 you can essentially just put on heaviest armour and face tank the game. Stand in front of boss and mash R1, when health gets low, heal. You can just ignore defensive play, just take the hits to the face.
DaS2 is more complicated to get overpowered. But there are many ways to do it, rapier being the simplest.
DaS3 is bit more tricky to get overpowered, because it’s linear as hell (so you can’t just go grab endgame item right away), and they tried really hard to “balance” the game, by making most of the fancy cool stuff shit. So the “overpowered” strat is just r1 mash with a straight sword. It’s grossly effective and will outperform a sorcerer using like 4 seperate items to boost Magic damage.
Bloodborne is also kinda hard to get brokenly overpowered. Beast Blood Pellets will do it (up to x1.70 physical damage output), but they are limited in supply and make you take more than double damage as well. If you rush chalices early and grind a bit you can get endgame tier gems as soon as you beat Blood Starved Beast, but getting to them at that level is arguably harder than just finishing the game normally. But normally it’s not that hard.
If you played Elden Ring “honestly” (ie didn’t google most OP build, and didn’t rely too much on summons taking agro for you), then prior games will feel far easier, in terms of combat. Exploration and punishment on death is far stricter in earlier games.
