Daggerfall Unity is pretty good if you know what you're going into. The game is the No Man's Sky of its era with most everything being procgen and having a real "make your own fun" bullshit premise.
If you don't want that then yeah, skip to Morrowind.
Morrowind is the only legitimately good TES game but Daggerfall and Skyrim are okay 6/10 timewasters to turn your brain off to. Skip Oblivion, but read the lorebooks from it which are pretty good. I never played Arena so I can't comment on it.
Daggerfall is very fun. I played the DOS version in 2018 and had a lot of fun but lost my save towards the end of the main quest.
Arena is unplayable, the resolution is too low and you can't look up or down.
Arena's a way shittier version of Ultima Underworld with a (fake-ish) open world. Ultima Underworld's legit worth playing and still holds up (if you can get past the ancient controls, which aren't too bad once you get used to them, and the jumping physics/controls, which are the worst things ever devised for any game ever.) Skip it unless you're really intersted in history.
Daggerfall is worth playing although it is, and always has been, as wide as an ocean and as deep as a puddle and a lot of the magic of the game is what's going on in your head moreso than what's really going on in the game. It's still great and worth at least a look and mods can transform it into something even better but be warned that it's a "love it" or "hate it" kinda experience

If you are interested just read wiki articles about the games. Oddly enough reading wiki articles is a fair approximation of actually playing Morrowind.

I have this kinda problem with oblivions leveling system. I keep getting +4 on a skill and if my character isnt perfect I keep restarting. I've probably played a quarter of the game 25 times.
