I just started playing the game today on yuzu. Does it matter which house I pick at the beginning? I was thinking of going for Golden Deer because I wanted to romance picrel.
So I'd have to beat the game 3 times in order to get all perspectives? How long is a single playthrough?
I'm very new to this type of game, but I've started on hard difficulty and classic (death is permanent), do you keep getting replacements for fallen characters? Did I make a mistake by choosing this setting?
Classic is basically the standard, non-wuss difficulty, and even Hard Mode in Three Houses is pretty easy. You'll be fine. You will have to play through each house to get the full scope of what's going on in Fodlan, what each character knows and doesn't know at any given time, what they're being honest or not about, etc. That said, Golden Deer is generally a great pick for an enjoyable first playthrough.
You have a finite amount of units. Classic may seem intimidating, but it was always how the series was designed for.
Three houses is one of the easier fire emblems, even on hard. You have the power to rewind time so its forgiving. Three houses only gets challenging during the optional side missions.
The game is long. I think my 1st playthrough clocked around 60 hours. But you have to understand Three houses gets bogged down with tedious shit. The academy sections get old quick. And the 1st half of the game is very samey for all houses which make it annoying to replay for other routes.
As someone that played all the fire emblems, I think Three Houses might be one of the worst to start with since it can you a completely different impression of the games compared to the others

IIRC, the creators of the game expected that people would do one playthrough, then go talk about it and be surprised then have discussions upon learning things from other people's playthroughs. It wasn't intended for someone to charge through all three routes back-to-back.
The house you choose will determine the story and your primary units. The 1st half of the game is samey for all houses, hitting most of the same beats. 2nd half of the game gets a bit more unique.
You can recruit students from other houses, but there's at least one in each house that wont join you.
Hild won't join black eagles. Dedue and Hubert will leave their original house.
Picking a house sets you on a story path, though one house has a split in the middle. The Golden Deer house is generally agreed to have great characters and the best final chapter in the game.
