Never played ghost warrior, but sniper elite is really one of the better sniper games. When you disable the aimbot, you actually need to learn the wind, bullet drop, etc. It's pretty fun, but the game itself gets bogged down by going too hard on being a generic stealth game.
5 goes too hard into being a generic 3rd person shooter. It's possible, though extremely difficult to do a shit ton of actual sniping in that game. Still fun though. I've been replaying 4 in the bathtub on my deck.

anon made a good point with lords of the fallen but the first sniper is actually good for the mechanics it presents, it goes for the power fantasy of the sniper shit and it doesn't expects you to take the history seriously other than have these cool bulletcam shots, mate.

If you're not playing the hardcore mode where there's no thing helping you perfectly place your shots, then it's actually a challenge of a game, but otherwise, they're just so simple, repetitive, and lacking in any gameplay diversity or difficulty that it's barely even worth finishing.
They're....a game. That's the most praise I can muster. They are both video games, that you can play. That's about it.
1. The game does not bill itself as that, and 2. The games are absolutely not "hardcore sniping simulators". They're more like one-man CoD games with stealth mechanics. You spend just as much (if not more) time knifing dudes from the bushes or dropping mines under trucks as you do actually sniping.
Sniper Elite is more like CoD in that it's an action movie. You do action movie things, the story is about Nazi super-weapons, and everything blows up.
If you really wanted a "realistic" sinper game, you'd be doing things like overwatching troops moving through a city or protecting a strategic point, spending an hour waiting for a glimpse of movement, and then 20 minutes calculating windage before dropping one shot through a window at some dude. It'd be pretty slow, very autistic, and extremely easy to frick up.

Yes, but in the realm of videogames that people will actually play, this is as clos as you're getting to a realistic sniping sim. I'm biased because I started the game with no prior knowledge of it on Hardcore Authentic without save scumming. So for me, it would take roughly 3-4 hours to finish a mission, sneaking around, trying to ID where enemies were and their routes etc.
I have, and I got really good at it and enjoyed it. But yeah, that's a high level autism required there, and the feedback from shooting in Arma isn't nearly as fun as something like Sniper Elite.
