It's objectively an amazing game with a lot of positives, but it does have some flaws, so it can only subjectively be the GOAT.
The only flaw in my eyes is that there's no full nudity, and animated sex scenes.

For a lot of people this was their first souls game. While overall its good, I honestly think this is one of their worst souls games. I think I'd rather play og DS2 than this, but not SotFS edition
It's one of the GOAT games, but the open world didnt contribute much to the souls formula. Souls games were always best as dungeon crawlers with tense atmosphere and gameplay, in ER you can just ride past 95% of threats. On Replays theres just zero reason to engage with almost anything and you just ride straight to the items you need for your build and the bosses.
Open world done a lot for Elden Ring, and its one of the very few games to do open world right. It did ruin the replayability, but the first playthrough is just better than any other fromsoft game.
The only thing that Elden Ring seems unambiguously worse at than the souls games is pvp.

Only the 1/4 was fun. Ironically the castles and linear dungeons with alternate routes felt good, even the underground, but the open world is empty, and the loot or rewards for exploring does not encourage exploration
The snow zone was even more boring, it felt like a bread dough so stretched out that it has no flavor.
