I think all of them are fantastic games so I'm ranking them on quality order according to my personal opinion:
Dark Souls: the most "balanced" of all them, from mechanics to content.
Dark Souls 2: the most experimental and mechanically richest of them along with the one with the biggest amount of content (until Elden Ring), held back by a serious lack of polish
Bloodborne: very experimental, way more polished but a bit too much on the easy side.
Dark Souls 3: the most polished but at the same time the safest one.
Elden Ring: same as Dark Souls 3, but the open world makes it too long to replay.
Demon's Souls: has some of the best content of the series, but it feels barebones compared to the rest.
I played them on the following order: DaS PTDE -> DaS2 -> DaS2 Scholar -> Dark Souls 3 -> Bloodborne (I own a Bloodbornestation) -> Demon's Souls via RPCS3 emulation -> Elden Ring
I don't consider Sekiro to be a Soulslike; it's a straightforward action game.

Sekiro I'm torn on. It's beautiful, incredibly well crafted, I love the aesthetic and feel, the stealth, but the core of the gameplay, the parrying, I'm just not fond of. I didn't finish it. I've finished DS2 twice so it has to rank above even if it's clearly a worse game.
Bloodborne: GOTY Edition > Bloodborne = Sekiro Shadows Die Twice > Dark Souls Remastered > Bloodborne: Game of the Year Edition > Elden Ring = Dark Souls 2 Scholar of the First Sin > Dark Souls 3 GOTY Editions = Demon Souls
