You can find them way too easily from eggs, they fly kinda slow but have excellent stamina and when they run out of stamina over water they just treat it like ground. If you want to get into the preserve areas early in the game so you can get access to decent accessories they are the way to go.
There is a reason for that /. The Vanwyrm saddle unlocks at 21 which is early game. The leveling scaling is wonky and it is way easier to get the first 30 levels than it is to get 31-40. The Cryst version is 41.

Birds that hover in place don't care about landing on water. Pals that walk / run do. Quivern's both a flier and a fast ground mount.
