Never really gave the soulsborne series any attention before Elden Ring released, I'm wondering if its worth buying and how different the combat/bosses are between the games.

It has the best bosses, and Elden Ring bosses/NPCs not being morons is due to using Dark Souls 3 as template. It's also extremely balanced, to the point that no buiod but LUCK is bad

Nah. It's still in the "tough but fair" zone. Fromsoft didn't cross that line until Elden Ring's endless bullshit. I feel bad for people for whom ER was their first From game. Such a bad first impression.

Definitely, especially since it's so cheap these days. The worst thing you can say about it is "it's not as good as [insert other Fromsoft game]" which is a high bar. It's a great game. There are better From games, but DS3 is the one I've replayed the most and probably got the most pure enjoyment out of.

It is way more well polished than Elden Ring. Like yeah you can say it's more linear but most of the game feels really well polished and it's a blast to explore.
In terms of difficulty I find it far easier than Elden Ring, there are maybe only a handful of super difficult bosses for a first run. A lot of the bosses are similar to Demon's Souls bosses in that they have a weakness or gimmick that can be exploited, which makes combat feel more like an adventure game than an action game.
It is also way more replayable than Elden Ring, as running through these stages is far more fun than galloping through empty plains with Torrent. None of the bosses feel bullshit besides some DLC ones but they are far from Elden Ring's BS.

you should 100% play ds1 before 3
it's not a direct sequel, but there's tons of stuff that will make more sense if you already know ds1, and you'll have a much better understanding of how you're expected to solve problem and deal with enemies
Not him, but I would recommend DS1 before DS3. DS3 pays pretty heavy homage to DS1 and it's a lot easier to appreciate if you've actually played DS1. Also, DS1 is just a great game. It is the best in the franchise in terms of exploration and level design, and almost as good as DeS and BB in terms of atmosphere. If you can just remind yourself that it's 11 years old at this point and it was building the foundations for the last decade of From's action RPGS, you'll be able to enjoy it for what it is even though it will feel a little dated at first. It's still my favorite From game.

with DS1, I tried both the remastered and the original with DSfix, and DS remastered fricks with a lot of the visuals of the original game
BUT I am not sure if they fixed this with the remaster but OG DS1 modded to 60 fps has a lot of issues but not being able to jump certain gaps, I feel like there are probably way more issues than just that but I feel someone else could explain that better than I. I agree with the other anons that playing and understanding DS1 lore helps with the enjoyment of DS3 because there are quite a few callbacks and references to DS1.
I agree with others though in that some parts of DS1 feel rough and unfinished, but due to how small from soft was compared to now, and the pure scale of DS1, I can sort of forgive those areas. Even Bloodborne has areas like that
You can go back and play 2 after and if you're still interested in the souls games.
2 is unfun sorry it’s an old game and doesn’t have the lore livability of dark souls

Are servers even back yet?
If you have a PS4, start with Bloodborne (+DLC). It's by far the easiest to start with and is standalone, so the references in DS3 (of which there are a lot) won't be lost on you.
