That's an entire industry issue though, there's a reason where most screencaps of something like even the exceedingly stiff Lodoss adaptation look like pure art whereas a cap of UBW looks like shit unless it is cherrypicked.
My favorite comparison is the HF3 teaser where they used the VN toning versus the release movie having an abhorrent Neapolitan sky.

They just can't help themselves, either because they misunderstood the source or because they just know what makes people point and clap. Artoria Alter and Medusa looks awesome but the way in which it is done actually makes sense for Fate, it was two gigacharged servants facing off. That same energy can't be brought to the battles involving mages and Shirou, though. It just doesn't make sense and ruins the tone and stakes.
Probably mostly a logistic issue, same as with all the low detail scenes.
Medusa vs. Salter also looked like complete ass, ufotable never had a good sense for fight choreography aside from turning the post processing up to 11, to levels that border on those MLG overedit call of duty montages that were all the rage a decade ago. most oldgay animators and directors are either solely showing for high-paying freelance cuts (think FOTM shounen) or are tied at the hip to people like Shinchiro Watanabe, who for the most part only do original anime. every now and again you get a decent production that attracts talent like this season's Frieren but insular studios like Ufotable don't benefit from the in-out nature of places like Madhouse, there's not really a freelance culture there so there's no attraction to be had. hence what I said here
about their general talent falling below par, they've not had a great time getting on new talented hires.

The berserker breakdance always comes to mind when talking about fate choreography because it was probably the single best choreographed scene in all of fate. Whatever the animators were smoking when they made that is what they should've been doing the whole time.
On normal speed it looks a little silly but if you slow it down it's like they're playing chess. berserker makes perfectly calculated moves to both keep saber away and set her up for an unavoidable hit.
