I just noticed frel line you should be doing hard difficulty, that has something to do with it. Hard ai is ruthless, aggressive and capable of fielding fleets in seconds. Basically, the ai cheats to keep up with you. I would say hard difficulty is for those that know exactly what to build in which order, there's nothing wrong with playing normal to get reacquainted with the game
