Dante and Vergil's faces have almost completely different bone structures in 5, no amount of lifestyle, habits, or environmental factors can change that aside from brutally invasive and painful surgery.
they really ruined Vergil's face, they could've at least used a more fitting model or just reused Dante's with slight alterations. DMC5 also ruined his hair and gave him chicken legs and weird proportions, no idea why they fricked him so hard.
The ultra-realistic look threw everyone's designs off

So that's a yes and no on Vergil being at fault, since it wasn't him as a whole being that decided to allow it in from the demon world.
