They looked better on CRTs because they were made to be played on CRTs, the same reason old "SD" video content looked so much better on them. No one is saying that modern higher resolution displays don't have any advantage over CRTs, they do.
The only way in which we went backwards is the color accuracy issue, and the fact that now ugly ass banding is a thing because modern displays have more pixels than there are colors being displayed. CRTs still to this day absolutely crush modern displays in that department. The rest of the problems HD/flat panel displays initially had have been remedied over the years though.

It was a half assed mode, the actual resolution is 576x480 and then interlaced mode altenates it to 576x960 (interlaced). Nowhere close to 1920x or even 1024x in terms of real resolution. It also chops the color depth from 24 bit to 16, causing noticeable dithering along car paints, banding in the sky, and overall makes GT4 look even more muted and flat than it already is compared to GT3's more vibrant colors.
There was a slew of PS2 games that used some black magic to achieve 1080i and it was a hidden feature that you needed to use some secret button combination to activate. 99% of people who played those games and had a television capable of using it never even knew about it.

GT5 works the best and runs the best, any version works but 2.11 is the recommended one, also you can use the master mod
GT6 is more glitchy and runs worse, only play on version 1.04 or 1.05, later versions have intense graphical issues
