Also the tech is there to get this kind of realism. When you think about it MK has always leaned towards the realism side with the OG game’s digitized style.
Even the original games had cartoon elements to them, like characters blowing up and leaving five thoraxes, twenty legs/arms and six skulls behind.

Not really. Unlike Smash, Mortal Kombat pretends to be a competent fighting game.
The need to appear hyper realistic is what's killing SOUL and is a blight among western games. A game needs at least some stylization to it otherwise it looks fricking disgusting, I don't want to play a video game to look at some dude's fricking pores, come the frick on.

Being honest here, NRS made Shao look pathetic.
I think the problem that most games have these days, is not the hyper-realistic shit. It's that they completely lack in tone, atmosphere and a general weirdness that these older games had. Looking back at older games and older MK, you would quickly pick up on it's tone/setting and you could instantly know it was MK. I think modern games feel soulless because they don't have that defining characteristic and thus they all feel hollow.
Sound is also extremely important in defining what tone you're going for, today, many video games sound/sfx and soundtrack are all way too generic.

I remember hearing that most video games were still sold in toy stores in japan and europe. And remembered how we used to have Toy Stores here in America.
I'd argue even nu-Doom games are pretty recognizable in style/characters so it's not even literally all big western studios, it may not be obvious but it seems like all good graphics come from studios with real graphics programmers that actually want to make videogames and not glorified Disney/Pixar movies.
