Being turned to a brick doesn't happen until after you die. 90% of people don't even know that you will get turned into a brick. It's just clear to them that having a patron god is a good idea. God's in dnd will do stuff for you. They will be your best buddy. Sometimes you don't even have to worship them. You just have to have done something they really liked.
For example, if the protagonist destroys the Shar worshippers Selune might say wow that was pretty sweet. Then when you die she might claim your soul even if you didn't actively worship her.

Yes it matters a lot. Each god has their own realm and when you die you can go there and probably do some cool stuff. The god of wars realm is like Valhalla where everyone fights and then they come back to life and fight again. But they all love fighting so it's kino for them.
If the gods like you enough they will even bring you back to life or make you immortal so you can keep entertaining them/gathering worshipers for them in the material realm.
