Shadow of the Colossus. I could see it being done really well by Genndy Tartakovsky.

He's known for wacky googly eyed characters and a highly stylized geometric aesthetic

Main two off the top of my head is Shantae and Stellaris. Shantae would obviously work well as an episodic adventure comedy.
Stellaris would make for an amazing Love, Death + Robots styled anthology series with each episode following a different empire/character/timeline that you could see in the typical Stellaris campaign. Watching the trailers for the Stellaris DLCs makes it clear that it would work pretty well as an animated series.

Sonic the Hedgehog.
Cyberpunk 2077. Yeah we got the cinematic masterpiece known as Edgerunners but I'd like to see an episodic structure where a merc just goes on gig after gig making eddies.

The last episode was the only good one and that's just because Smasher was in it and killed like half of the main cast. It really wasn't that good.
But that does sound like a cool idea. Cyberpunk, both the setting and the genre, could be such a fricking goldmine for great animated series. There could be endless stories in Night City alone.

Tbh good cartoons are so rare nowadays that I would rather not risk a beloved game turning into a shitty cartoon.
Castlevania but played entirely straight and accurate to the lore.

Starting with Simon is to bring people in and doing Christopher and the Morrises after is to shine some light on other less popular entries
Oddworld. The fact that they haven't even done so much as a comic annoys the crap out of me. And the fact that Soulstorm did so terribly means we're probably not going to see any more of that world for a long ass time.
