An actual dungeon would be nice, something that challenges you to make the most out of all your limited inventory in a gauntlet of sorts.
Maybe an exclusive addition to the map too, like a previously hidden meadow in the forest where the hundreds of koroks have an end-game minigame.
I didn't find them all but if there was a substantial reward them all I would have gone out of my way for it.

Personally Id have just made all koroks disappear from the game once you upgraded all the slots to max
The Triforce, a second quest, the ability to register any mount at stables, removing weapon durability, sleventy-smazollion new monsters, playing as Zelda, and also Shigeru Miyamoto should come to my house and be my butler.
Nothing. I don't want to be forced to look up a checklist and treat going through 900 koroks as a fricking job just so I "don't miss content". It's perfect as is with half of them being optional and those who bother being given an "okay cool job buddy think about what you've done a little".
Ever since I beat Ganon and started NG+ I just don't feel like playing anymore. I still have a few things to do but side quest's are quite lacking, and I think I got the coolest dungeons already.
I am still to this day searching for koroks for fun in my down time since launch. I'm not even close to finding them all but when i happen to stumble on one I get a small dopamine rush. This game is still so dam fun to explore.
If you can't appreciate the game outright telling you not to bother doing its chores then I don't know what to tell you. I bet you didn't also speed up the travelling, used mods to cut down on the grinding and just played the good parts of the game.

i completed the whole game not knowing you could use a shield to slide down a hill
I know how to do this but never do it because I prefer to just climb the top and glide from there.
Shields doesn’t take damage if you slide on sand or snow and also if you slide on paths it also doesn’t take damage

A full-ass heart container so you can have both max heart containers and max stamina wheels in one playthrough without cheating.
