I'd prefer an MGS1 remake over MGS3. MGS3 still plays really well, where MGS1 is comparatively quite dated. TTS obviously ruined the cutscenes of the game and didn't bother doing enough with the level layout to account for first person controls.
That said, a remake of MGS3 I think would just need to make going into the menu less necessary -- don't remove any existing menus but add quick access for camos and healing for when you don't feel like going through them. Keeping the menus is important since a lot of Kojima-isms show up in there, like vomiting if you spin Snake and whatnot.
This is one series though where I think a series of Remakes that are faithful to the original but improve graphics and makes things a bit smoother to play would be better than a sequel. I don't see anywhere MGS could go other than following post-MGS1 Snake during his Philanthropy work or MGS2 Snake leading up to MGS4. In either case, I don't see them handling the character as well as Kojima would.

It's the weakest part of the game by far. A million hour bike sequence followed by a fricking escort mission grinded whatever enjoyment I had for the game to a halt and killed the final fight with the boss.

If they are actually serious about remaking the series outside of just graphics they have absolutely no idea what they're getting into. Imagine the amount of development behind the "technology" needed for AI, Secrets, Easter Eggs etc.

The total surface area is so small that it wouldn't be all that complicated a job at all. Of course, it'd be even easier if they remade MGS1 or 2 instead.
make it so that medical supplies are more limited so that you can actually run out of them unless you're terminally horrible at the game and also playing on easy that you can actually get enough wounds instead of just dying - or just scrap the entire fricking mechanic but in the long run its just some menu fricking around where you randomly mash the medical supplies (you don't have to remove the bullet before you bandage the wound) until the red on your HP bar goes away
MGS1 and 3 are pretty timeless, we need an MGS2 remake that includes all the cut content so that you can actually have fun playing (instead of watching) the game outside of VR missions

I'm playing through the HD remakes of 2 and 3 on Vita and they hold up, so personally, absolutely nothing.
Basically just port the 3DS version, cause that added crouch walking and less intrusive menus, and modernise the graphics
The 3DS version looks the worst out of all the version by a large margin.
