It is without a doubt Sabin. Not only is his character great, but he is crazy strong and you can build him to use magical techniques so he is a mage with infinite mana.
Tifa's monk class never has any bearing on the story or her character at all. It seems like something that only exists in the battles.
FFT. Monks have passive 30% damage increase on punching. Punching is your P.Att stat squared (times your Brave as a percentage but you'll keep that at 97 anyway), so every increase to that stat is greater than the one before it, unlike all other attack methods being linear growth. And finally, there are ways to increase your P.Att in battle.
Ramza's good at a lot of things (he has male physical stats and female magic stats and can never leave the party from having Faith too high, so he's most exceptional as a mage if anything) but due to his ability to in one turn raise both his P.Att and Speed, I think the majority of players probably make him a Monk, and he'll roll the game like that. Monk is the most iconic Ramza that most people will have played as.
