You'll still get a bad end if you haven't improved the town through specific missions in previous playthroughs though. Just go in and don't take it too seriously.

Sekiro or Ghost will get you the closest to a "Samurai" experience. Nioh is also good but the katana move set work mostly for humans. However all these games also fall into the shinobi dishonoribu category. Ghost being the most disappointing that you cannot just stay a samurai and beat the game with your honor intact.
would have been neat if GoT had a sort of split for the storyline, where one you embrace being the Ghost and a shinobi and the other staying true to your samurai code, since technically gameplay wise you can literally just walk up to every mongol encampment and do the standoff to wipe it out.

Shinobi were literally just samurai carrying out covert operations.
They very much were not. That's why a bunch of weapons associated with ninjas like the kamaitachi and the kunai were originally farming tools.
