Saturn X4 has music that loops properly, a couple of tunes have additional intros, and there's an extra heatwave effect in the background of the opening stage and Magma Dragoon.
Saturn X3 kind of sucks because it's windowed. It's an 8:7 SNES frame that's pillarboxed. The borders do change stage to stage so it's a curiosity.
CPS2 ports, and that's seriously about it. And even those are not as good as the arcade originals, other than having all characters at the same time in vampire Savior.
Other than the resolution difference and some bug fixes the Saturn CPS2 ports are generally still good ports that hold up well. Street Fighter Zero 3 for example is the only version that has all of T.Hawks animations.
I heard some people say Tomb Raider is better on Saturn, but it seems to be mixed opinions.
I wouldn't say Resident Evil is 'better' on Saturn, but it's certainly unique to the PS1 version. It has some unique costumes, new skins for Hunters in the caves and a second Tyrant fight. Most importantly it has the "battle mode" which is a mildly cool post-game feature.

I played it on Saturn because I preferred the darker aesthetic. From a technical perspective, PS1 is superior, though.

Literally name a single piece of extra content thats actually good and worth playing in any of this crap. I swear to go every single time people say to play some gimped version of a game for the extra content its literally never worth it. It always sucks, isn't as well designed as the base game and you're forced to trudge through a version of a game that sucks to even get to it.
Face it, Saturn copers, your system sucks and has nothing worth playing. You had an argument in the mid 90s with your better than average arcade ports but these days its just irrelevant.

Street Fighter Zero 3 has 6 additional characters with their own unique animation frames that are missing in all other releases including arcades and future updates. There's also World Tour Mode, expanded Dramatic Battle Mode, etc. All available from the start.
Vampire Savior has additional characters and still plays faithfully to the Arcade. As a result it's generally the preferred version even to this day.
Capcom fighters. SFA2 is the best. It's glorious.
Megaman 8 has a couple extra boss fights.

I heard there are missing animations on the PS1 version compared to the Saturn.
I think it has an extended dungeon. 32 floors compared to Saturn which has 21. Still has the dark moody music so thats cool.

Even more on psp but the multiplayer is limited by the platform. So Dreamcast is the best
