The system in DD1 allowed for a huge amount of customisation and personalisation without being overly complicated for the casual player. You had as many options as say Skyrim but the armor layers were designed to compliment each other and show through in ways that made each configuration feel unique and personal you. Honestly baffling decision to bh.

Best armour system is Mount & Blade: Warband. Armour actually works and can soak heaps of damage (unlike fricking Bannerlord). Blunt damage weapons deal some damage through armour, but not so much that it's useless. Pierce damage also penetrates a a bit, and slash damage is weakest - but again, not so weak as to be useless. And you can choose your head, torso, hand and boot armour.
Best looking armour would have to be Mordhau. At release armour was mostly shit, then later they started adding memeshit, nogs and women, but for a couple years in-between the armour designs were top tier.
Dark Souls gets an honourable mention for a handful of its pieces.
I will also throw in Witcher and Kingdom Come: Deliverance into the honourable mentions.
