Yeah, but starting with PS2. In my experience PS1 games should be played in original resolution because of the extremely low quality of the assets. It looks coherent, grimy and right that way.
My approach is using 2x internal resolution specifically for 5th gen games. I find 240p to impede on readability, but I also find 960p and above to clash with low-res assets, so 480p is the right balance.

PS1:x4 res + downgraded to original res with a CRT shader. It's gorgeous
PS2:x4 res + shader for boosting luminance
Dreamcast/wii/gc/wiiu : x4 res
mame : screen res + build-in CRT shader.
Genesis/MS:scanlines&composite shaders
nes/snes:simple scanlines shaders.
watch a let's play then pretend like you've played it

the correct way is to not play them at all if you didn't grow up with them
I don't know anon, I'm playing SH right now, and though you can see it aged really badly(especially the cutscenes) the game kind of holds up today

Emulators and and good Quake engine ports will let you scale the UI independently from the 3D elements to stay readable.
