Diablo 1 has the best atmosphere
Easiest class in d2 are spellcasters, since you dont need to worry about gear as much.

Pretty much this, any melee will be more difficult because your gear actually matters. Absolute easiest is (barring any D2:R changes which I haven't followed) Blizz Sorc. Skelemancer might technically be easier but is way worse. Ignore any moron that tries to mention immune enemies, you're supposed to just teleport / run past everything in Hell anyway.
You damn well know when you reach Hell Travincal you have a wall that you must deal with and you can't just run/teleport past it in single player.
yeach, just farm some runes, give better runewords to your merc with better bases and just teleport to let him regen hp when hit too hard
but yes it filters absolute morons jumping on blizz sorc in d2r thinkign they can do everything
necro is ez mode everything else can be op or w/e depending on what you wanna do. DIablo 1 is still unironically the best diablo game still so I would play it with a modern res/quality of life features mod
Summoner necro is the easiest if you have shit gear.
Paladin is the most versatile and least minmaxy

1 is a completely different beast
pretty much all classes will stomp through normal in 2, it's nightmare where they (attack builds, especially melee) hit a brick wall
then you hit hell, and casters need to grind out 30 levels to have enough skill points to use 2 elements well and the game's just not very fun at that point, they inflated enemy health in hell by something like 11x late into the game's lifespan due to online homosexuals

Diablo 1 is shit, Diablo 2 is the only good Diablo game. Easiest classes are sorc and pally.

if you just want to clear all difficulties, necro is hands down the easiest. corpse explosion scales directly off enemy health, slow curse neuters bosses and nothing in general gets to you past skellie wall. wear whatever rags you happen to find, makes little difference.

Going melee build is kinda shitty as you are reliant on your weapon and if you got bad rng with drops or don't have online ot trade, you're fricked kinda (unless off line and save edit)
That said, depending on if you want to grind or not, the easiest if necro if you'll grind and you'll still be at a wall with the boss of act 2 even if you grind to 30 (kek good fricking luck)
Really anything but barb is fine, imo, just be careful where you put your skills. And if you do a caster class, buy mana potions a lot, you'll want like 3 slots of them and 1 slot of health

any melee class is hard mode
summoner necro is slow but steady
most casters are good tier
sorceress is best but very squishy
d2/lod is my most played game in my life

Just pick a class and play, only thing i would suggest you is to get that respec mod/command so you can have FUN experimenting and not start over all the time
If you get stuck, open up a guide and see what to do

D1 is really fricking good, go play it before you start 2
Elemental druid is the easiest for going through normal difficulty.
for hell runs, it can be a split depending on play style. Sorc's teleport can't be understated, so its easy to give it the win here.

Java-zon
Put all your points into the melee lightning Java skills and the level 30 skill lightning fury for clearing big packs. Also some of the dodge skills. The charged voltage melee strike is beeeeeg damage. Like usual Put as many points as you can into vita.
Build is incredibly strong. But since it's basically only lightning damage you'll have a shit time in hell difficulty unless you go hybrid and put some points into freezing arrows.
Sorceress is probably the most intuitive. Melee characters' mechanics get more complicated if you want to do decent damage, but a sorceress you literally just cast spells and watch it hit the enemy.
