There are 2 levels of F-Zero GX Story where gitting gud literally isn't enough unless you mean achieving insane levels of physics abuse. You have to strategize to kill certain cars to have a chance even with your best skills, and succeed by luck.

this game is absolute bullshit, got a HK silver a while back and played with gf, it was almost as gruelling as Batman Gotham City Racer
Racing games with snaking like F-Zero GX are complete garbage.

I hope you're not counting games with miniturbos, miniturbos are like turning checkers into chess, they add an incredible depth to the game. Honestly, snaking in games like F-zero gx doesn't really do it for me, but still better than no snaking.
I've been trying to learn how to play GX and I'm just terrible at it. I don't want to play on novice so I'm forcing myself to play standard at the very least but past the first set of tracks I'm just awful.
Chocobo Racing had me at the edge of my seat

Trackmania. It's less nerve wracking to play than F-Zero GX especially if you're playing for hours on end, but I'd say it's harder. I have like 250 hours in one of the trackmanias and can't finish black series.
Also there are a lot of just stupid broken racing games from the 16 bit era where the AI is fricking insane and just laps you.
GX not a bad choice though. I'm having similar trouble beating the last Ballistic NG series' but that's not retro, just retro inspired

I beat F Zero GX without any guides or help on launch. I had to replay this one tunnel in story mode a lot but other than that I don't think any of it was difficult.

Not that the games are hard because of AI or track design but because you get massive framerate dips in almost every N64 racing game. Have fun doing 90 degree corners at a single digit framerate
