It seems like they switched back to younger protagonists with Sun and Moon because they thought the proportions of the older models was somehow bad when they mad every character real sized for Sun and Moon, and while XY still had SD models outside of battle.
The primary demographic of Pokémon is children. Thus they make the characters young so that the children can self insert themselves in the Pokémon world.
