Start with the 0.
It's an all around great game, and if you must play just one, might as well start with the best one. Zero also does flesh out some characters of the Y1, and if you get invested in the plot and cast of the franchise, it's easier to sit through the later games in chronological order afterwards.

Both Kiwami remakes were kinda rushed, and do have various issues that would not be present in classic Yakuza 1 and 2. They're not "god awful" games by any means, and some additions are very nice (ie. various character backstory fleshing cinematics in K1).
That being said, if you are playing on PC, mods are there to help you. I do recommend the Kiwami REDUX mod for K1, Classic / Licensed Music Restoration mods for both of them, and the "No player hit bounce rush combo only" mod for K2.
Kiwami with the soundtrack mod to put in the original soundtrack is fine overall so I don't know why people tell you not to play it. Kiwami may also be a remake of yakuza 1 but it also is very much a follow up to 0. It has substories that serve as sequel to ones in 0 and the combat is largely the same. Honestly you wouldn't lose much by playing 0 before kiwami/1.
Just pick one and go for it.

the people who say don't play kiwami are yakuza 0 homosexuals who fricked the series and convinced sega to turn yakuza combat into turn based, and take this from a guy who started with kiwami, start with kiwami, it's better and put you with main story of the whole series, while yakuza 0 is a overrated prequel that most of the characters in it don't make it to the half of story, let alone the next game, anon, start with kiwami 1 or Yakuza 1, yakuza 0 is very optional.

they are all basically the same just upgraded over time
what you are missing out are just story which you can just watch on youtube

I've played nearly every game in this series and I can't think of any good reason to play the originals over Kiwami.
I forgot to add 3 between K2 and 4, my bad. So it'd be either

Kiwami has some boss fights that are such fricking bullshit I refuse to play the game again. 0 is fantastic. Haven't finished Kiwami 2.
Just play them in order. I'd pick Kiwami 1-2 over og 1-2 any day of the week but would still recommend REDUX mod for Kiwami 1

One of the best times in my life
It's less about not playing kiwami and more about not starting with it, like for all intents and purposes it's basically a 0 expansion pack (I say this in reference to it's production quality) and is filled with references towards 0, so it's made for people coming off of 0. So if you don't care about playing the originals and are fine with the remakes then start with 0 then play kiwami 1 then kiwami 2 then 3 and so on, otherwise you can play through the original 1, the original 2, then 3 and so on.
If you're going to play one yakuza game, make it count and play 0. It's an amazing game on its own, not just as a prequel or introduction. It greatly improves combat over the ps3 games, while having the best story, characters and performances in the entire series, along with the best setting in 80's japan.
