look to the past
It's not worth the investment. Pixel art is only useful for 2D games whereas 3D models can be used in 2D and 3D games quite easily. It's also much more cost-efficient to use character models because if you have to change something on a character, you can just edit the model instead of potentially redrawing every sprite. If you have a big world, you can reuse a basic skeleton, mess with a few features, and put clothes and the physics will handle it. Reusing 2D characters are much more blatant.
The cost of 2d is nothing for AAA developers. The real reason is that 2d is not popular.
Shaving development time is huge if you have 100+ people on the payroll. No business wants to waste money for no reason.

AAA refers to a game with a very high budget (in the hundreds of millions, generally). That's all the term means. A huge portion of that budget goes to high-resolution assets and 3D modeling/animation. It's really difficult to spend hundreds of millions of dollars on a 2D pixel game.
AAA was the original NFT stockmarket cope term for videogames that just sort of bled into the parlance of the unrelated market of the people who play those videogames.
Shareholders aren't going to overinvest in pixel art because they can't connect it with value, it's like how morons think that CGI is better than practical effects.
No AAA just refers to the maximum copium going on as people try to sell people on a mystery box that is "just as good as highly rated credit bonds but cheaper". If the videogame bubble had happened now, they'd be using moronic post-ironic terminology and there would be hour-long video essays about how stupid they are.
