It's not worth the investment. Pixel art is only useful for 2D games whereas 3D models can be used in 2D and 3D games quite easily. It's also much more cost-efficient to use character models because if you have to change something on a character, you can just edit the model instead of potentially redrawing every sprite. If you have a big world, you can reuse a basic skeleton, mess with a few features, and put clothes and the physics will handle it. Reusing 2D characters are much more blatant.
AAA refers to a game with a very high budget (in the hundreds of millions, generally). That's all the term means. A huge portion of that budget goes to high-resolution assets and 3D modeling/animation. It's really difficult to spend hundreds of millions of dollars on a 2D pixel game.

The cost of 2d is nothing for AAA developers. The real reason is that 2d is not popular.
