That's an entire generation right there where the grand majority of players would be playing with interlaced video. And one of these consoles is the best selling platform of all time, too.
This is super important information because a lot of people mistakenly stretch out the truth of the capability of these consoles. Yes in theory they could, but never the norm and even further was an extreme rarity.
But this was common even in the next generation. PS3 was capable of 1080p, but it was only a small set of games usually that were nowhere as graphical complex as bigger titles. Then something like the 360 couldn't even do 720p for most of its games and had to rely on upscaling from 640p.
Dark Souls couldn't even manage true full widescreen at 720p on gen 7 consoles, From had to render gameplay at a skinnier internal resolution and THEN stretch it out to 16:9 (though Demon's Souls did run at full proper 720p IIRC). Amusingly, the Switch version absolutely trashes the 360/PS3 versions of PTDE graphically, since it runs at 1080p30 with far fewer framedips (and with a simple mod it can run at 720p60, albeit with dips like the Pro/X 60fps patches for DS3 and Sekiro). Too bad about that sound quality.

How easy is it to hook a mister up to a CRT? Can you get one that has component output right out of the box, or do you need to go through some kind of adapter frickery?
Literally just works. Even for consumer CRTs to play arcade games of varying refresh rates at native refresh rate, it just works as intended and mister does all the work. Just get the analog mister and use a vga to component or whatever. you might have to adjust some of the ini settings like sync on green or whatever, but aside from that, it's really straightforward.
What about S-Video? The component video on my CRT TV is wonky and everything is overdriven for some reason.
should work fine, just get a VGA to S-video cable. Basically whatever your connection is should work fine as long as you have the right cable.

I used to have 32 inch 4:3 crt tv, I moved within a city block so it wasn't carrying that piece of shit from apartment to van at door, but about 100 meters or so. It wasn't the weight, but how the edges at the bottom murder your fingers and palms.

Not always, and not usually with video game consoles. TV signals yes, but, Nintendo hacked the NTSC standard to paint only half of the lines, aka 240p, which is why you see those prominent black "scanlines" in between the image. They called it double strike and it truly is 60 FPS. Later consoles like the PS2 / Gamecube did draw the alternating lines, retroactively known as 480i.

I used to play my Xbox360/PS3 games on a CRT. I played MGSV on it without ever knowing how much ammo I had on my guns because I literally couldn't read the numbers.
When I got a PC with an HD monitor I got blown the frick away just by being able to READ shit. It was mind blowing for me.

If there is any hope or future for the CRT retro gaming scene, it won't be in CRTs. It will be in a new phosphor display technology that achieves similar results. All CRTs will eventually die because there are specific parts to them which are no longer manufactured (and cannot be manufactured again without reviving the entire supply chain) and cannot be replaced without cannibalizing another existing CRT. I say all of this as someone who owns a CRT TV and desktop monitor.
I think they still get sold in Brazil since the Genesis has been selling there since its release.

I got this exact crt from facebook marketplace when I finally got in on the retro crt fad. while it was kind of cool the trailing(phosphor decay?) on it was so severe that it wasn't something I could seriously use long term. crt monitors have aged much worse than the tvs apparently. also trying to use it for browsing gave me a throbbing headache in like 20 minutes.

The main benefits of CRT are perfect blacks, superb motion clarity and very low response times.
Downsides are geometry issues, fishbowl reflections, moire patterns, too low dot pitch etc. on cheaper monitors and the tube wearing out over time on all monitors. I had to throw away a Samsung 959NF because it simply got too dim to use.
CRTs are literally a lost technology, replaced by cheaper and inferior alternatives because of average consumers vanity. Form factor played more important role than image quality.

They were bulky and limited in display size. Even at the time everyone knew the image quality on LCD sucked but the aesthetic aspect won. And that's not even mentioning HD, most people were unaware that HD CRTs even existed meanwhile it was standard on those new fancy flat TVs. Also everyone forgets plasma was a thing, they avoided alot of the problems LCD had, PS3 still looks amazing on a good plasma TV.

I had a 27 inch crt in college and it felt like it weighed 500 pounds. Moving it was a huge pain. I replaced it with a shitty flat screen and had zero regrets.
