In the good days it was because you could show that the character you played as can burrow because it's a mole or roll because it's an armadillo. Then it just because the style because people struggle to get out of mindsets.

Kids like talking animals and non-Mario platformers became a thing in the early 90s, when vidya as a whole was mostly seen as a little kid's thing besides doom (which of course was considered satanic etc for it).
Come to think of it I wonder if it's because Mario is the definitive platformer and is a human, that this had an influence for people to try to avoid making another platformer featuring a jumping dude to avoid being called a Mario copycat.

Because either they have small children running around as the MC or animal-people. The genre having its roots in N64/PS1 child-marketed games means that you will have 'cute characters' as the key design.
Some have robots instead but they're less common.
Of course there's also 3D Platformers in the style of Portal where you have some weird plot bullshit for why the MC is running around solving shit but they tend to be either philosophical wank or surreal shit.
Probably because it's more believable that an animal thing can jump 10 feet in the air. Whereas a human doing that requires a certain level of cognitive dissonance, or some contrived explanation.

Animals are superhuman in some ways, usually pretty mundane ways if they're mammals, and this gives you a good excuse as to why you're able to move around the environment in a superhuman way.
One of the first games I wanted to make was one where you play as a shapeshifter, so you can turn into a monkey to swing from things or throw shit at enemies, turn into a bull to ram a door down, turn into a cat to navigate rooftops and survive a long fall, turn into a mouse to sneak into the walls of a building and find small animal communities inside them, turn into a dog to track scents and dig up the ground, etc. I wanted it to be something you could spam, so you could do stuff like turn into a small animal to dodge an attack, then immediately jump into a larger form to counter attack. Stuff like that.
