Artstyle choice. In the books, it's explained by saying they get double or triple the amount of rations/food as non-combatants do so they can stay roided out. Unless that's been retconned by any newer books past coalition's fall/end, I forget the title.
Yeah, in the books they eat 8,000 calories a day which kinda explains why, er how "normal" size people exist in that setting. Some ridiculous miracle mushroom or enzyme that's super protein and calorie dense if I remember. It's all mentioned and over with in a single paragraph in one of the first books

I wonder about this a lot with old good/new bad game franchises. They universally get cleaner, more sanitized, lose all their sharp edges, gore becomes less grotesque, etc. I think it's just some universal law at this point that something about graphics and related technology improving comes at the cost of grittiness and overall art style and feel. The more I think about it the more I feel like graphics shouldve maxed out at the PS2 era.
Because the people that made that world and its aesthetics in the first place did not develop this remaster. They lack that artistic vision, so it does not translate well into the new edition

I give Gears a pass on that washed out brown and grey color scheme because its thematic for the setting but lets be honest here Gears had one of the the worst usages of Bloom in any game during that era. Shit was cartoonishly bad even among a host of other games that made horrible use of it.

My PC copy of 1 died because of the shitty DRM. There is a super simple workaround, but it still feels bad.

A lot of the time, some games are basically either missing proper source code or running on some weird frankenstein/spaghetti code that can't be accurately replicated, or they are outsourced cheaply and given tight deadlines.
It takes a fraction of the amount of time to remake something than it does to make something new.
