Because they don't want to? If you wanted to make a perfect recreation of the game you should have applied yourself more and ended up as the director instead. Why should other people make what you want them to make instead of what they want to make?
If that were the case Nomura wouldn't have worked on a FF7 Remake at all. He would have finished 15 like he wanted to.

they're a business supplying a product. they're trying to make money. they have shareholders, ect. that's not to say its a bad thing when a director gets a passion project. but ff7 remake part 2 isn't going to sell as well due to nomura 'leaving his mark' all over this game
Funny since none of the directors wanted to do this anyway. The game was literally sent off to CC2 before SE ripped it out of their hands and forced Nomura on the project. He didn't even know about it until they announced it publicly.
According to many interviews, it was Kitase and Nojima that kept wanting to change shit and add compilation trash into the storyline. If you watch the "making of" interview, Nomura looks and sounds pretty dejected, like he doesn't give a frick.

He has fricked up his other games like Kingdom Hearts but this time around he's was "less" of a problem then usual.
Nomura isn't a "problem", he knows what makes certain franchises what they are. He has adamant respect for Sakaguchi.
It was his decision to make KH Days and bring in a shitty novel writer to crate the plot.
It's just difficult when egos like Iichiro Yamaguchi and Gideon Emery dominate the design process

But the original director, creators, producer, artists and composers were all directly involved in the remake?
In fact Nomura flat out came forward and said "Everyone is in their fricking 60's or retiring from the business, if we're ever going to do this remake thing, we'd better do it now." more or less
They needed to bloat this game this with a bunch of pointless side quests so they could make more games of this (more games= more money)
Nomura literally did just want to 1:1 recreate the game you flaming homosexual, but he can't just not listen to his team, especially the producer and writer.
If you dumbfricks did any research you would understand it was Nomura who kept the game from becoming a Kingdom Hearts spin-off. Thank frick he's on the team otherwise it legit would have been dogshit.
