Just slap some Red Dead Redemption Mechanic on top of the Breaking Bad story, and there you go. Most of the action would be the player either defending their lab, or infiltrating and taking down other labs. It's all in the remote New Mexico plains, so you don't have to worry about gunfire attracting attention from police. You can just kill rival gangs indiscriminately. Or, alternatively, play honorable and take them out using less lethal means.
Let's not pretend that Breaking Bad will be anything other than AAA slop. At least a RDR clone will allow the player to actually feel like they're inside of the world of Breaking Bad. It should go without saying that you would be able to go into town, and handle a bunch of missions and quests in town too. It won't all be out in the desert. But for obvious reasons, you can't have huge shootouts in town like in RDR. Still, you can have stealthier missions. Walter White can think of various interesting ways to get what he wants. Like traps and poisoning and all that kind of stuff.
its a condensed version of GTA except you control Jesse, Walter, and Mike. They each have their perks like Jesse can drive cars really good, Walter can make explosives on the fly, Mike can slow down time to shoot down people.

There are some time skips in the show. The game could just generally be about cooking and distributing meth with some minor problems. It would be hard to make a main villain in that time though.
