Outside of opening locks it's not the most valuable skill in early access.

Lockpicking depends on your Sleight of Hand skill which is dependent on DEX, which technically everyone has, just not everyone is necessarily good at. You can have a character high in DEX and proficient in Sleight of Hand who isn't a thief
You just need thieves tools in your inventory and anyone with high DEX can lockpick shit, some other characters or you yourself can have an even higher chance with proficiencies

Is it worth going Bounty Hunter for it to cause disadvantage on Ensnaring Strikes, or is that a waste vs just using hunter's mark and grabbing something else? I figure with high dex/average str I probably wouldn't care about Ranger Knight's heavy armor.

if I play a support/ranged character as a warlock/bard/druid, is it viable to bring Minthara, Shadowheart and Astarion/Lae'zel or is this combination of classes useless
Class balance isn't really that vital in DnD, it's not like an MMO where you need a trinity. As long as you have at least one character that can survive in melee for the squishes to hide behind and at least one character with magical healing of some kind you're good to go. It's perfectly viable to even just have a part of only one class, like a party of only bards or a party of only paladins.

I currently play Pathfinder Kingmaker on hard without a healer. If I can do this in pathfinder, then of course it's possible in dnd, which is easier.
I just don't like going without a healer in DnD games because you end up wasting so much money on potions or you have to rest constantly. But yeah I agree it's fine to not have a healer.

Both being cheap munchkin classes, bard being able to do literally everything, and paladin being a fighter/cleric

you can choose to learn it, like all class spells. Forest Gnomes get it for free regardless of class.
forgot to add; for Ranger it's a level 1 spell, for forest gnomes it's innate so you don't have to use a spell slot to activate it.
