That's funny, I first played Skyrim after playing Witcher 3 (2 full playthroughs) and actually ended up liking Skyrim way more. Probably because despite Witcher 3 having better writing, characters, and side quests Skyrim is still way more free, more immersive, and just more FUN. It's a truer RPG and a truer video game. Witcher 3, for all its Ubisoft style open world bloat, felt like a downright visual novel at times.

About three hours in I uninstalled. Combat is moronic
Combat is only fun if you mod the game to have unlimited skill slots so you have the full moveset available to you. Otherwise it's way too restrictive and a green build will see you just mashing light attack for hundreds of hours.

also, don't 100% the areas. just play the game at your own pace. do a healthy mix of side content and main content. if you bog yourself too long in the side stuff you're gonna get burned out.

the story quest is the biggest source for XP, along with Witch contracts (iirc), so don't worry about that.
also, enable level scaling.
my first play through i only focused on the main quest and was never under levelled, stop making up excuses for your autistic tendencies. also, don't enable level scaling unless you liked how oblivion played
The way the quests in TW3 work you get full exp from story quests, but side quests rewards based on your level compared to the quest's recommended level. It's more or less impossible to get overleveled, unless you prioritize the side quests in recommended level order. And even then, once you hit the level threshold, those side quests will turn grey, giving you no exp.

The biggest problem is that Witcher 3 on hard is the same as Witcher 2 on easy. The demographic for this game was dudebros and girlgamers.
This game is the epitome of style over substance. Is it pretty? Yes. Is the soundtrack amazing? Yes, I absolutely love tracks like the Mandragora, Seeking Resonance, the Velen Outskirts theme and the Oxenfurt theme. Is the story good? Yeah it's alright, but really takes a deep dive after the siege of Kaer Mohren. However the combat is somewhat disappointing, the character upgrade system feels rather generic and the crafting system is dogshit. I remember being very disappointed when I found out that potions are a 'craft once, replenish automatically with le stronk alcohol' deal. Also the quests aren't particularly captivating due to the witcher sense. It feels like a diametrical opposite to Kingdom Come. The graphics in KCD are somewhat more.... restrained, the soundtrack is nothing special, and the story is equally as mediocre overall, but the actual gameplay elements are vastly superior. Combat has much more depth, crafting is actually engaging and the quests require at least some basic critical thinking.
I think the main gripe I have with the Witcher, though I did overall enjoy my first playthrough and currently doing a second, is that it's an 'immersion optional' game. The quests are braindead easy, and if you for example have to fight a boss in a Witcher contract, sure, you can look it up in the bestiary read the lore and about its weaknesses, but you can just as easily not do that and still beat it, albeit it will take longer. Compare this to KCD where for example you have to scout out Prybislavitz. You can run in, scout everything and run out with everyone chasing you, you can sneak in at night and do your scouting, or you can don some Cuman equipment and infiltrate the place.
I tried to play this game like 3 different times and couldnt get pass the janky combat, and enemies looking like they're running around at 15 fps

I really should play this game again, haven't touched it since around release and never played any of the DLCs for it. Should I play it modded or just leave it vanilla?

Play it with the DLC, play hearts of stone halfway trough the game, blood and wine after finishing the game.
There are a few quality of life mods that help the game, but overall the game is just fine without mods.
But there is a unofficial bug fix collection mod, that one is essential.
Hearts of Stone and Blood and Wine were so fricking great, it's bizarre how they went from those to Cyberpunk somehow.

CP2077 was gonna be a good game too. they released it underbaked.
If the leaks are real then they half way in the development decided to throw out most of the storyline to fit in keanu reeves, and lots of other things like that where higher ups took decisions that really fricked over the development of the game.
