Yeah I would do that sometimes. I would like the idea of the protags themselves wandering the wrong way like I would - “damn, I know I gotta get to the gym in olivine but I wanna check out this way”. Double backs, realizing you’re a bit over your head or there’s roadblocks, it’s all part of the flavors of exploration
When I first played as a kid, that's how I did it too.
Theoretically, you can already go to Mahogany Town right after Goldenrod City! However you have to go back to Ecruteak City for the HM Surf!

if you go through mt mortar you can reach mahogany town and catch a girafarig before fighting morty and he literally can't hurt you
I clear the trainers on the route but that's it.
doing the rocket hideout right after morty gives a better paced story and not being overleveled makes the rocket hideout not as much of a slog (though it's still pretty bad)
I do this as well. With the exception of Pryce’s gym, the levels are entirely lower to the east of Ecruteak than to the west, so I always do it first.
Tried it on my last play.pleased to find mt mortar isn't nearly as treacherous to navigate that I once thought

I don't necessarily go and fight Pryce right away but the Rocket Hideout is pretty solid for EXP at that point

You get wienerblocked from going further east but you get a Red Garydos that you use to cross the whirlpool islands
Mahogany before Olivine was meant to be the intended order during development, but after they added Cianwood and moved a gym from Lake of Rage to Cianwood, they decided to encourage going to the left first instead.

I think it does help pace things a bit better, by having the Team Rocket encounter at the Rocket Hideout occur after beating Morty gives more time for the build-up to the Radio Tower takeover, I don't remember if this causes issues for the dialogue you have with Silver in the Olivine City encounter and the Rocket Hideout encounter though since I think in the latter he might've mentioned Lance's comments to him whereas in the former I think he was just talking about Jasmine being weak.
Anyhow it splits the main three Team Rocket encounters in GSC more evenly;
Violet Gym -> Team Rocket [Slowpoke Well] -> Azalea Gym -> Goldenrod Gym -> Ecruteak Gym -> Team Rocket [Rocket Hideout] -> Mahogany Gym -> Cianwood Gym -> Olivine Gym -> Team Rocket [Radio Tower] -> Blackthorn Gym
