Phone - graphene os, dumb phone, or one of those phones that are modular and ship with linux. Best bet is to wait for the european google pixel that has removable battery and never upgrade it. My phones are a google pixel 3 and a shitty 6 year android with google services uninstalled, i got it for $30 4 years ago
Computer - start with an amd cpu, from there think about the case and choose a motherboard. (Mini atx is cheapest). Then choose a gpu, ~50% of your net budget should be gpu. Then grab some ram, grab an m2 or ssd (my m2 was $5 for 120gb), grab a power supply, and install a linux iso onto a boot drive. Current build is an amd r5 2600 and amd 6700XT gpu, 16gb ram. Whole thing cost about $400 and is stronger than ps5/series x
Choosing linux distro - it doesnt really matter. When you start everything is an upgrade from winblows. I used debian for 5 years because thats what came with raspberry pis. In actuality debian sucks. I switched to arch recently and its way better, i get way better performance on everything i do. If you have patience and can read the arch wiki just choose arch. If you want something easy go for mint or opensuse tumbleweed.
Thats pretty much everything. For email selfhost or use protonmail. For phone plan use the prepaid mvno. For smart watch garmin is the best for privacy. I think thats everything.
